Waitress for Lau Bo 69 crossing street to serve on 8-9-22--Vung Tau copy






Lẩu Bò 69 [Beef Hot Pot 69] actually serves a lot more than beef. Outgrowing their small space, they bought a building across the street, which became their main seating area. Their waiters, then, have to constantly cross the street to go from kitchen to tables.

Notice the large leaves. Vietnamese must eat more leaves of various sorts than anybody else. During my five months in Namibia, I had to content myself with these tiny mint leaves from my landlord's pitiful plants. I also plucked his wild grown hot peppers that even he, a spicy food loving Indian, hadn't even tried.

In India, for all the vegetarianism, there's precious few vegetables and leaves eaten. I've always admired that about Vietnamese cuisine, the use of crisp fresh vegetables.
